“Grower-sparkling”

Healthy ripe grapes will make a more balanced and rounded base wine. In the case of sparkling wine, it is primarily the quality of the harvested grapes and the base wine made from them. That`s why is essential that grapes for Carassia are harvested from parcels planted and grown for sparkling wine from the beginning, after which every moment of winemaking and ageing takes place in our cellar. The quality of the final product and the elegance of our Carassia is totally on us.

Carassia is made exclusively by bottle fermentation and maturation, by the Champenoise method. What makes these wines special it’s the way these traditional varieties - pinot noir and chardonnay - express themselves in the condition of this unique place of origin which we call “sparkling terroir”. Grapes harvested exclusively by hand are fermented in stainless steel tanks after a gentle pressing to preserve their freshness and firm texture to the maximum. Base wines will then be assembled - also with perpetual reserve wines - and bottled for the second fermentation. Making sparkling wine is a series of exact decisions, from blending base wines to the length of maturation to the balancing act of dosage and so on.

An original “sparkling” terroir, a strong commitment to quality, ingenious thinking shown by a young winemaker, and a lot of respect for nature. That's how we became the first Rising Star Winery according to the CSWWC committee.

Magic happens in the bottle

Sparkling wines are about patience and generosity. The length of maturation is determined in each case by the evolution of the wine in the bottle. Carassia is aged on lees for at least 20 months in the case of the standard bottles and 30 months in magnum bottles, but this can be more dependent on the evolution of the wine. Long bottle maturation is the essence of high-quality sparkling made by the traditional method. During this time, the wine is born as a result of a natural “creative transformation”, endowed in the bottle with a creamy texture, a rich autolytic taste and a festive sparkle characterized by elegance, harmony and individuality.

The name / Noblesse oblige

Carassia is all about individuality. The name Carassia and the wine itself express the uniqueness of this place and highlight the prominent role of the place of origin: Carastelec Village. The symbol Carassia, the five intertwined hearts symbolizes the unity and friendship that the wine and the place of origin connect. At the same time, it represents the five pillars on which our winemaking philosophy is based: terroir, grape varieties, technology, long bottle maturation, and careful attention to detail.

It has an elegant taste and creamy texture; a single sip of it reveals the complexity and richness of the Chardonnay and its long-lasting ageing on the lees. Carassia Rosé Brut is a bright salmon-coloured, generous, fruity sparkling wine. Elegantly fruity, exquisite, great complexity, fantastic finish. The refined fruity aromas are intense and meld harmoniously with citrus notes and an elegant, subtle minerality. The final is fresh and smooth. Its effervescence is long-lasting, vivid and creamy. Matured 24 months on lees in the bottle.

Carassia Classic Brut

This classic assemblage of Chardonnay, Pinot Noir and Meunier is deep, complex sparkling with a rich and precise mousse with pronounced biscuity notes, a subtle combination of structure, length and purity. The expressive nose with some complexity opens on white flower aromas followed by fine biscuity layers, hints of candied fruits and brioche. Its texture is seductive, round and well-balanced with rich and precise mousse and a long, straightforward aftertaste.

This classic assemblage of Chardonnay, Pinot Noir and Meunier is all about elegance, finesse, and brightness, a subtle combination of complexity, length and freshness. Elegant with nice complexity and soft mousse. Ripe appley nose with straw notes, nice toastiness. Full body towards being winey. Its texture is seductive, round and well-balanced, with velvety bubbles and a long, straightforward aftertaste.
