The foundation of a well-balanced and harmonious base wine lies in the vitality of ripe, healthy grapes. In the realm of sparkling wine, the pivotal factors rest upon the excellence of harvested grapes and the subsequent creation of the base wine. It is crucial that Carassia grapes are sourced from vineyards meticulously planted and nurtured exclusively for sparkling wine production. Every step of winemaking and ageing unfolds within our cellars, emphasizing our responsibility for the ultimate quality and elegance of Carassia.
Carassia adheres strictly to the traditional method, relying on bottle fermentation and maturation. What distinguishes these wines is the unique expression of traditional varieties—pinot noir and chardonnay—within the distinct conditions of our designated "sparkling terroir." Hand-harvested grapes undergo gentle pressing and fermentation in stainless steel tanks to retain maximum freshness and firm texture. The assemblage, including perpetual reserve wines, precedes bottling for the crucial second fermentation. Crafting sparkling wine involves a series of precise decisions, from blending base wines to determining maturation length, and achieving the delicate balance of dosage.
An original “sparkling” terroir, a strong commitment to quality, ingenious thinking shown by a young winemaker, and a lot of respect for nature.
Magic happens in the bottle
Sparkling wines epitomize patience and generosity. The duration of maturation is individualized, guided by the wine's evolution in each bottle. Carassia undergoes a minimum of 20 months on lees for standard bottles and 30 months for magnum bottles. Long maturation is the essence of outstanding sparkling wine produced through the traditional method. During this time, the wine undergoes a natural "creative transformation," developing a creamy texture, a rich autolytic taste, and a festive sparkle characterized by elegance, harmony, and individuality.
The name / Noblesse oblige
Carassia encapsulates individuality. Both the name and the wine itself reflect the distinctiveness of its origin, spotlighting the paramount role of Carastelec Village. The Carassia symbol—five intertwined hearts—symbolizes the unity and friendship binding the wine to its birthplace. Concurrently, it represents the five pillars underpinning our winemaking philosophy: terroir, grape varieties, technology, extended bottle maturation, and meticulous attention to detail.

Carassia Blanc de Blancs Brut
Bright golden colour with a delicate mousse, this Blanc de Blancs Brut, matured in bottles for a minimum of 24 months, has a rich and impressive profile with fresh and delicately fruity, floral and biscuity notes on the palate. It has a harmonious structure: the perfect balance of freshness and maturity. It has an elegant taste and creamy texture; a single sip of it reveals the complexity and richness of the Chardonnay and its long-lasting ageing on the lees. The delicate and long mousse is soft; its extra-long finish gets in every corner of your palate.

Carassia Blanc de Blancs Brut Magnum
Bright golden colour with a delicate mousse, this Blanc de Blancs Brut, matured in bottles for 36 months has a rich and impressive profile with fresh and delicately fruity and biscuity notes on the palate. It has a harmonious structure: the perfect balance of freshness and maturity. Rich and ripe leesy and appley nose. Fresh and citrusy with some tropical notes.
It has an elegant taste and creamy texture; a single sip of it reveals the complexity and richness of the Chardonnay and its long-lasting ageing on the lees. The delicate and long mousse is soft; its extra-long finish gets in every corner of your palate.

Carassia Rosé Brut
Carassia Rosé Brut is a bright salmon-coloured, generous, fruity sparkling wine. Elegantly fruity, exquisite, great complexity, fantastic finish. The refined fruity aromas are intense and meld harmoniously with citrus notes and an elegant, subtle minerality. The final is fresh and smooth. Its effervescence is long-lasting, vivid and creamy. Matured 24 months on lees in the bottle.

Carassia Rosé Magnum is a serious rosé, elegant, fresh and succulent. Peachy colour, delicious nose with lovely sumptuous mousse. On the palate, it is velvety and deliciously fresh, as well as generous and well-structured. Made from base wines harvested in the stunning 2018 vintage, matured 36 months on lees.

Carassia Classic Brut
This classic assemblage of Chardonnay and Pinot Noir is deep, complex sparkling with a rich and precise mousse with pronounced biscuity notes, a subtle combination of structure, length and purity. The expressive nose with some complexity opens on white flower aromas followed by fine biscuity layers, hints of candied fruits and brioche. Its texture is seductive, round and well-balanced with rich and precise mousse and a long, straightforward aftertaste.

This classic assemblage of Chardonnay and Pinot Noir is all about elegance, finesse, and brightness, a subtle combination of complexity, length and freshness. Elegant with nice complexity and soft mousse. Ripe appley nose with straw notes, nice toastiness. Full body towards being winey. Its texture is seductive, round and well-balanced, with velvety bubbles and a long, straightforward aftertaste.
